- ½ cup brown sugar, packed

- 1 cup zucchini, grated and squeezed dry (about 1 medium zucchini)
- 1 cup carrots, grated (about 2 medium carrots)
- ½ cup walnuts or pecans, chopped (optional)
- ½ cup raisins or chocolate chips (optional, for extra sweetness)
Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using).
Step 3: Combine Wet Ingredients
- In another bowl, whisk the eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until smooth.
Step 4: Add Veggies and Combine
- Stir the grated zucchini and carrots into the wet mixture. Make sure the zucchini has been squeezed dry to prevent excess moisture.
Step 5: Combine Wet and Dry Mixtures
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the nuts, raisins, or chocolate chips if using.
Step 6: Bake
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Cool and Serve
