Instructions
Step 1: Prepare the Raspberry Syrup
- In a small saucepan, combine raspberries, sugar, and water.
- Cook over medium heat until the raspberries break down and the mixture becomes syrupy (about 5-7 minutes).
- Strain the syrup through a fine mesh sieve to remove seeds. Let cool completely.
Step 2: Make the Mascarpone Cream
- In a large bowl, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold in the melted white chocolate until fully incorporated.
Step 3: Assemble the Tiramisu
- Dip the ladyfingers quickly into the milk (don’t soak them, or they’ll fall apart).
- Arrange a layer of dipped ladyfingers at the bottom of your dish.
- Spread half of the mascarpone cream evenly over the ladyfingers.
- Drizzle half of the raspberry syrup over the mascarpone layer and sprinkle with fresh raspberries.
- Repeat the layers with the remaining ladyfingers, mascarpone cream, raspberry syrup, and fresh raspberries.
Step 4: Chill and Serve
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
- Before serving, garnish with additional fresh raspberries and white chocolate shavings, if desired.
