- 2 cans (15 oz each) white beans (like cannellini or great northern), drained and rinsed
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 bay leaf
- Salt and pepper, to taste
- 2 cups fresh spinach or kale (optional, for added greens)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Sauté the Aromatics
- Heat olive oil in a large soup pot over medium heat.
- Add the ground beef and cook until browned. Drain any excess fat if necessary.
- Stir in the onion, garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.
Step 2: Build the Flavor
- Add the diced tomatoes, thyme, smoked paprika, cumin, and bay leaf. Stir to combine.
- Pour in the beef broth and bring the mixture to a boil.
Step 3: Simmer the Soup
- Reduce the heat to low, add the white beans, and let the soup simmer for 20-25 minutes to allow the flavors to meld together.
- If using spinach or kale, stir it in during the last 5 minutes of cooking.
Step 4: Final Touches
- Taste and adjust seasoning with salt and pepper as needed.
- Remove the bay leaf before serving.
