  • 1 box (3.4 oz) instant vanilla pudding mix
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt or sour cream
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, whisk together the pumpkin puree, vegetable oil, yogurt, eggs, vanilla extract, and both sugars until smooth and creamy.

Step 3: Combine the Dry Ingredients

  1. In another bowl, whisk together the flour, vanilla pudding mix, baking soda, baking powder, cinnamon, nutmeg, cloves, ginger, and salt.

Step 4: Combine Wet and Dry Mixtures

  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 5: Bake

  1. Pour the batter into the prepared loaf pan, spreading it evenly.
  2. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  3. Remove from the oven and let the bread cool in the pan for 10 minutes before transferring it to a cooling rack.
