Ingredients

For the Brownies:

  • Unsalted Butter (½ cup, melted) – Adds richness.
  • Granulated Sugar (¾ cup) – Sweetens the brownies perfectly.
  • Brown Sugar (¼ cup) – Gives extra moisture and chewiness.
  • Eggs (2 large) – Provides structure.
  • Vanilla Extract (1 tsp) – Enhances the chocolate flavor.
  • All-Purpose Flour (½ cup) – Keeps the brownies soft and tender.
  • Unsweetened Cocoa Powder (⅓ cup) – The key to a deep chocolate taste.
  • Salt (¼ tsp) – Balances the sweetness.
  • Chocolate Chips (½ cup, optional) – For extra gooeyness.

For the “Bloody” Raspberry Filling:

  • Raspberry Jam (½ cup) – The sweet and tangy “blood.”
  • Cornstarch (1 tsp, mixed with 1 tbsp water) – Thickens the filling.
  • Lemon Juice (1 tsp) – Enhances the tartness of the raspberries.

For the Vanilla Frosting (Optional):

  • Powdered Sugar (¾ cup) – Creates a smooth topping.
  • Milk (1 tbsp) – Adjusts the consistency.
  • Vanilla Extract (½ tsp) – Adds extra sweetness.

Instructions

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C). Grease a mini muffin tin with butter or nonstick spray.

Step 2: Make the Brownie Batter

  1. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  2. Add eggs and vanilla extract, mixing until fully incorporated.
  3. Sift in flour, cocoa powder, and salt, then stir until just combined. Fold in chocolate chips if using.

Step 3: Bake the Brownie Bites

  1. Spoon the batter into the mini muffin tin, filling each about ¾ full.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are slightly soft.
  3. Remove from the oven and immediately press a small indentation in the center of each brownie bite using the back of a spoon or a small round object.
  4. Let them cool in the tin for 5 minutes, then transfer to a cooling rack.

Step 4: Make the Raspberry “Blood” Filling

  1. In a small saucepan over low heat, combine raspberry jam, cornstarch mixture, and lemon juice.
  2. Stir continuously until the mixture thickens (about 3 minutes).
  3. Remove from heat and let it cool slightly before using.

Step 5: Fill the Brownie Bites

  1. Spoon or pipe a small amount of the raspberry filling into the center of each brownie bite.
  2. Let the filling settle for a few minutes to create a “bloody” effect.

Step 6: Make the Vanilla Frosting (Optional)

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle over the brownie bites for a creepy contrast.

Step 7: Serve and Enjoy!

Arrange your Vampire Brownie Bites on a platter and watch them disappear! The gooey raspberry filling oozes out when you take a bite, making them the perfect spooky treat.

Notes

  • Don’t Overbake: You want the centers to stay slightly fudgy for the best texture.
  • Use a Piping Bag: For precise and easy filling, use a piping bag to add the raspberry “blood.”
  • Let the Brownies Cool: This helps them hold their shape before adding the filling.
  • Make Ahead: Bake the brownie bites a day ahead and fill them before serving for the freshest taste.
