Instructions
Step 1: Prepare the Pancake Batter
In a large bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, mix egg, milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined (a few lumps are okay).
Step 2: Caramelize the Pineapples
Heat a non-stick skillet over medium heat and melt 2 tablespoons of butter. Add brown sugar and stir until it starts to melt. Place the pineapple rings in the skillet and sprinkle with cinnamon. Cook for 2–3 minutes on each side until caramelized and golden brown. Transfer to a plate and set aside.
Step 3: Cook the Pancakes
In the same skillet or on a griddle, pour about ¼ cup of batter for each pancake. Immediately place a caramelized pineapple ring on top of the batter. Cook for 2–3 minutes, or until bubbles form and the edges look set. Flip the pancake and cook for another 1–2 minutes until golden brown.
