Ingredients
- 1 lb turkey sausage (ground or links, casings removed)
- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, peeled and sliced
- 3 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans, trimmed and chopped
- 1 (14 oz) can diced tomatoes (with juice)
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper, to taste
- 1 cup baby spinach or kale
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Cook the Turkey Sausage
- Heat olive oil in a large pot over medium heat.
- Add the turkey sausage, breaking it up into small pieces with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
Step 2: Sauté the Vegetables
3. In the same pot, add the onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
Step 3: Add Broth and Herbs
4. Stir in the diced tomatoes, broth, thyme, oregano, and bay leaf. Bring to a boil.
Step 4: Simmer the Soup
5. Reduce the heat to low and add the zucchini, green beans, and cooked sausage. Simmer for 20-25 minutes, stirring occasionally.
Step 5: Add Greens and Serve
6. In the last 5 minutes of cooking, stir in the baby spinach or kale until wilted.
7. Remove the bay leaf, taste, and adjust seasoning with salt and pepper as needed.
8. Ladle the soup into bowls, garnish with fresh parsley, and serve warm.
