  • For the foil packets:
    • 1 block (14 oz) firm tofu, pressed and cut into cubes
    • 1 cup broccoli florets
    • 1 red bell pepper, sliced
    • 1 medium zucchini, sliced into half-moons
    • 1 large carrot, julienned or thinly sliced
    • 1 cup snap peas
    • 2 tablespoons sesame oil or olive oil
    • Salt and pepper, to taste
  • For the teriyaki sauce:
    • 1/3 cup soy sauce (use low-sodium if preferred)
    • 3 tablespoons honey or maple syrup
    • 1 tablespoon cornstarch mixed with 2 tablespoons water
    • 1 teaspoon ginger, grated
    • 1 garlic clove, minced
    • 1 teaspoon sesame oil
  • Optional toppings:
    • Sesame seeds
    • Chopped green onions

Instructions

Step 1: Preheat the Oven or Grill

  • Preheat your oven to 400°F (200°C) or heat your grill to medium-high.

Step 2: Prepare the Teriyaki Sauce

  1. In a small saucepan, combine soy sauce, honey, ginger, garlic, and sesame oil. Bring to a simmer over medium heat.
  2. Add the cornstarch slurry and whisk until the sauce thickens, about 2 minutes. Remove from heat and set aside.

Step 3: Assemble the Foil Packets

  1. Tear off large sheets of aluminum foil (one per serving).
  2. In a mixing bowl, toss the tofu and vegetables with sesame oil, salt, and pepper.
  3. Divide the tofu and veggie mixture evenly among the foil sheets.
  4. Drizzle a generous amount of teriyaki sauce over each portion.

Step 4: Seal the Packets

  • Fold the foil over the mixture, crimping the edges tightly to seal and create a packet.

Step 5: Cook the Packets

  • For the Oven: Place the foil packets on a baking sheet and bake for 20-25 minutes.
  • For the Grill: Place the packets directly on the grill grates and cook for 15-20 minutes, flipping once halfway through.

Step 6: Serve

  1. Carefully open the packets (watch out for steam!) and transfer the contents to plates.
  2. Garnish with sesame seeds and chopped green onions, if desired.

  • Press the Tofu: Removing excess moisture ensures it stays firm and absorbs the sauce better.
