- 1 red bell pepper, sliced
- 1 medium zucchini, sliced into half-moons
- 1 large carrot, julienned or thinly sliced
- 1 cup snap peas
- 2 tablespoons sesame oil or olive oil
- Salt and pepper, to taste
- For the teriyaki sauce:
- 1/3 cup soy sauce (use low-sodium if preferred)
- 3 tablespoons honey or maple syrup
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon ginger, grated
- 1 garlic clove, minced
- 1 teaspoon sesame oil
- Optional toppings:
- Sesame seeds
- Chopped green onions
Instructions
Step 1: Preheat the Oven or Grill
- Preheat your oven to 400°F (200°C) or heat your grill to medium-high.
Step 2: Prepare the Teriyaki Sauce
- In a small saucepan, combine soy sauce, honey, ginger, garlic, and sesame oil. Bring to a simmer over medium heat.
- Add the cornstarch slurry and whisk until the sauce thickens, about 2 minutes. Remove from heat and set aside.
Step 3: Assemble the Foil Packets
- Tear off large sheets of aluminum foil (one per serving).
- In a mixing bowl, toss the tofu and vegetables with sesame oil, salt, and pepper.
- Divide the tofu and veggie mixture evenly among the foil sheets.
- Drizzle a generous amount of teriyaki sauce over each portion.
Step 4: Seal the Packets
- Fold the foil over the mixture, crimping the edges tightly to seal and create a packet.
Step 5: Cook the Packets
- For the Oven: Place the foil packets on a baking sheet and bake for 20-25 minutes.
- For the Grill: Place the packets directly on the grill grates and cook for 15-20 minutes, flipping once halfway through.
Step 6: Serve
- Carefully open the packets (watch out for steam!) and transfer the contents to plates.
- Garnish with sesame seeds and chopped green onions, if desired.
