For the Marshmallow Topping:

  • Mini Marshmallows (2 cups) – Melts into a gooey, golden layer.

Instructions

Step 1: Cook the Sweet Potatoes

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of water to a boil. Add the cubed sweet potatoes and cook for about 15 minutes or until fork-tender.
  3. Drain the potatoes and transfer them to a large mixing bowl.

Step 2: Mash & Mix

  1. Mash the sweet potatoes using a potato masher or hand mixer until smooth.
  2. Stir in melted butter, brown sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.

Step 3: Assemble the Casserole

  1. Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish.
  2. Sprinkle the mini marshmallows evenly over the top.

Step 4: Bake & Toast

  1. Bake uncovered for 20–25 minutes, or until the marshmallows are golden brown and slightly melted.
  2. Let cool for a few minutes before serving.
