For the Marshmallow Layer:

  • 2 cups mini marshmallows

Instructions

Step 1: Prepare the Sweet Potato Base

  1. Preheat your oven to 350°F (175°C).
  2. Bring a large pot of water to a boil. Add the sweet potatoes and cook until fork-tender, about 15-20 minutes.
  3. Drain the sweet potatoes and mash them until smooth.
  4. In a large mixing bowl, combine the mashed sweet potatoes with butter, brown sugar, eggs, vanilla, cinnamon, nutmeg (if using), and salt. Mix until smooth and creamy.

Step 2: Assemble the Casserole
5. Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish.

Step 3: Make the Streusel Topping
6. In a small bowl, mix together the flour, brown sugar, and pecans.
7. Stir in the melted butter until the mixture is crumbly.

Step 4: Add the Toppings
8. Sprinkle the streusel topping evenly over the sweet potato base.
9. Bake in the preheated oven for 25 minutes.

Step 5: Add Marshmallows and Finish Baking
10. Remove the casserole from the oven and sprinkle the marshmallows evenly over the top.
