  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Wet Ingredients:

  • 1 cup mashed sweet potatoes (about 1 medium sweet potato, cooked and mashed)
  • ½ cup brown sugar
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ¼ cup milk (or almond milk for dairy-free)
  • 1 teaspoon vanilla extract

Optional Mix-Ins:

  • ½ cup chopped pecans or walnuts
  • ½ cup chocolate chips or raisins

Instructions

Step 1: Prepare the Sweet Potatoes

  1. Roast or Boil the Sweet Potatoes:
    • Roast: Pierce a medium sweet potato with a fork and bake at 400°F (200°C) for 45-50 minutes, or until soft.
    • Boil: Peel, chop, and boil the sweet potato for 15-20 minutes until fork-tender.
  2. Mash the cooked sweet potato until smooth and let it cool.

Step 2: Prepare the Batter

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate medium bowl, whisk the mashed sweet potatoes, brown sugar, honey (or maple syrup), eggs, oil, milk, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients. Mix just until combined—do not overmix.
  5. If using, fold in chopped nuts, chocolate chips, or raisins.

Step 3: Bake the Bread

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use fresh sweet potatoes: Canned sweet potato purée works, but freshly mashed sweet potatoes give the best flavor.
  • Don’t overmix the batter: This keeps the bread soft and fluffy.
  • Check for doneness: Every oven is different—start checking at 50 minutes by inserting a toothpick in the center.
