  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup packed brown sugar
  • 2 large eggs
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans (toasted for extra flavor)

Instructions

Step 1: Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or nonstick spray, and line the bottom with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients
3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Mix the Wet Ingredients
4. In a separate bowl, whisk the brown sugar and eggs until smooth and well combined.
5. Stir in the melted butter and vanilla extract.

Step 4: Combine and Add Pecans
6. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
7. Gently fold in the chopped pecans.

Step 5: Bake the Bread
8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
9. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
