Ingredients

  • Boneless, Skinless Chicken Breasts (2 large, butterflied)
  • Sundried Tomatoes (¼ cup, chopped) – Adds a tangy, slightly sweet flavor.
  • Fresh Spinach (½ cup, chopped) – A nutrient boost and fresh taste.
  • Mozzarella Cheese (½ cup, shredded) – Melts beautifully inside the chicken.
  • Cream Cheese (¼ cup, softened) – Adds creaminess.
  • Garlic (2 cloves, minced) – Enhances the savory flavor.
  • Olive Oil (2 tbsp) – For searing the chicken.
  • Salt & Pepper (to taste)
  • Italian Seasoning (1 tsp) – Adds extra depth of flavor.
  • Paprika (½ tsp) – For a touch of smokiness.
  • Toothpicks – To secure the chicken.

Instructions

Step 1: Prepare the Filling

  1. In a bowl, mix sundried tomatoes, chopped spinach, mozzarella cheese, cream cheese, and minced garlic.
  2. Stir until well combined.

Step 2: Butterfly the Chicken

  1. Lay each chicken breast flat and carefully slice through the center, stopping before cutting all the way through.
  2. Open the chicken like a book and season both sides with salt, pepper, Italian seasoning, and paprika.

Step 3: Stuff the Chicken

  1. Spoon the filling evenly into each chicken breast.
  2. Fold the chicken over the filling and secure with toothpicks.

Step 4: Sear the Chicken

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the chicken for 2-3 minutes per side until golden brown.
