For the Chicken:
- 4 large boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
For the Filling:
- 1 cup fresh spinach, chopped
- ½ cup sun-dried tomatoes, chopped
- ½ cup ricotta cheese (or cream cheese)
- ½ cup shredded mozzarella cheese
- ¼ teaspoon red pepper flakes (optional, for heat)
- 1 teaspoon minced garlic
For the Creamy Sauce:
- 1 tablespoon butter
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ cup chicken broth
Instructions
Step 1: Prepare the Chicken
- Slice each chicken breast lengthwise to create a pocket, being careful not to cut all the way through.
- Season both sides of the chicken with salt, pepper, garlic powder, and Italian seasoning.
Step 2: Make the Filling
- In a mixing bowl, combine chopped spinach, sun-dried tomatoes, ricotta cheese, mozzarella cheese, red pepper flakes (if using), and minced garlic.
- Stuff each chicken breast with the mixture and secure with toothpicks.
Step 3: Sear the Chicken
- Heat olive oil in a large skillet over medium heat.
- Add the stuffed chicken and cook for 4-5 minutes per side, until golden brown.
- Remove chicken from the skillet and set aside.
Step 4: Make the Sauce
- In the same skillet, melt butter and add minced garlic. Sauté for 30 seconds until fragrant.
- Pour in heavy cream and chicken broth, then stir in Parmesan cheese, garlic powder, and Italian seasoning.
- Let the sauce simmer for 2-3 minutes until it thickens slightly.
Step 5: Finish Cooking the Chicken
- Return the stuffed chicken to the skillet, spoon some sauce over the top, and cover with a lid.
- Let it simmer for another 5-7 minutes, or until the chicken is fully cooked (internal temperature of 165°F / 75°C).
Step 6: Serve and Enjoy
- Remove toothpicks before serving.
- Spoon extra sauce over the chicken and serve with your favorite side dishes.
Notes
- Don’t Overstuff: Too much filling can cause the chicken to break open while cooking.
- Use Fresh Spinach: Fresh spinach adds the best texture, but frozen (thawed and drained) works too.
