Ingredients
For the Cookies:
- 2 ½ cups all-purpose flour

- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg

- ½ cup freeze-dried strawberries, finely ground into a powder

- ¼ cup granulated sugar
- 2 tablespoons freeze-dried strawberries, finely crushed
Instructions
Step 1: Prepare the Strawberry Powder
- In a food processor or blender, grind the freeze-dried strawberries into a fine powder. Set aside.
Step 2: Make the Sparkling Strawberry Sugar
- In a small bowl, mix the granulated sugar and crushed freeze-dried strawberries. Stir well to combine and set aside for topping.
Step 3: Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and strawberry powder.
Step 4: Cream the Butter and Sugar
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, and mix until smooth.
Step 5: Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Chill the Dough
- Cover the dough and refrigerate for 30 minutes to 1 hour. This helps the cookies hold their shape during baking.
Step 7: Shape and Coat the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the chilled dough into 1-inch balls. Roll each ball in the sparkling strawberry sugar mixture until fully coated.
Step 8: Bake
- Place the coated dough balls onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
