Ingredients

Scale

For the Cookies:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup freeze-dried strawberries, finely ground into a powder

For the Sparkling Strawberry Sugar:

  • ¼ cup granulated sugar
  • 2 tablespoons freeze-dried strawberries, finely crushed

Instructions

Step 1: Prepare the Strawberry Powder

  1. In a food processor or blender, grind the freeze-dried strawberries into a fine powder. Set aside.

Step 2: Make the Sparkling Strawberry Sugar

  1. In a small bowl, mix the granulated sugar and crushed freeze-dried strawberries. Stir well to combine and set aside for topping.

Step 3: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and strawberry powder.

Step 4: Cream the Butter and Sugar

  1. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add the egg and vanilla extract, and mix until smooth.

Step 5: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6: Chill the Dough

  1. Cover the dough and refrigerate for 30 minutes to 1 hour. This helps the cookies hold their shape during baking.

Step 7: Shape and Coat the Cookies

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll the chilled dough into 1-inch balls. Roll each ball in the sparkling strawberry sugar mixture until fully coated.

Step 8: Bake

  1. Place the coated dough balls onto the prepared baking sheet, spacing them 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use Quality Freeze-Dried Strawberries: They provide the best natural flavor and vibrant color.
  • Don’t Skip Chilling: Chilling the dough helps the cookies bake evenly.
  • Customize Your Sparkling Sugar: Add edible glitter or sanding sugar for extra sparkle.
