Instructions
Step 1: Prepare Your Oven and Pan
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Step 3: Make the Bread Batter
In a large bowl, whisk together the granulated sugar, brown sugar, oil, egg, buttermilk, and vanilla extract until smooth.
Gradually stir in the dry ingredients until just combined.
Toss the chopped strawberries in 1 tbsp flour (this keeps them from sinking). Gently fold the berries into the batter.
Step 4: Make the Cream Cheese Filling
In a separate bowl, beat the softened cream cheese with the sugar, egg yolk, and vanilla until smooth and creamy. You can use a hand mixer or a fork.
Step 5: Assemble the Bread
Pour half of the bread batter into the prepared loaf pan.
Spoon the cream cheese mixture over the batter, then gently spread it out.
Add the remaining bread batter on top and spread it evenly.
Swirl gently with a knife if you want a marbled effect.
Step 6: Bake the Bread
Place the pan in the center of the oven and bake for 50–60 minutes.
Check for doneness by inserting a toothpick into the center—it should come out clean or with just a few moist crumbs.
If the top starts browning too quickly, cover loosely with foil halfway through.
Step 7: Cool and Serve
Let the bread cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
