Ingredients
For the Brownie Base:
-
½ cup unsalted butter, melted
-
1 cup granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
⅓ cup cocoa powder
-
½ cup all-purpose flour
-
¼ tsp salt
-
¼ tsp baking powder
For the Cheesecake Layer:
-
8 oz cream cheese, softened
-
¼ cup granulated sugar
-
1 large egg
-
1 tsp vanilla extract
For the Strawberry Swirl:
-
½ cup strawberry preserves (or fresh strawberry puree)
-
1 tbsp water (to thin, if needed)
Instructions
Step 1: Preheat the Oven
-
Preheat the oven to 350°F (175°C).
-
Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
Step 2: Prepare the Brownie Base
-
In a mixing bowl, whisk together melted butter and sugar until smooth.
-
Add eggs and vanilla extract, whisking until well combined.
-
Sift in cocoa powder, flour, salt, and baking powder.
-
Fold the dry ingredients into the wet ingredients until just combined (do not overmix).
-
Pour the brownie batter into the prepared pan and spread evenly.
Step 3: Make the Cheesecake Layer
-
In a separate bowl, beat the softened cream cheese and sugar until smooth and creamy.
-
Add the egg and vanilla extract, beating until fully incorporated.
-
Pour the cheesecake mixture over the brownie layer and gently spread it into an even layer.
Step 4: Create the Strawberry Swirl
-
In a small bowl, stir the strawberry preserves with 1 tbsp of water to thin slightly.
-
Drop spoonfuls of the strawberry mixture over the cheesecake layer.
-
Use a toothpick or knife to gently swirl the strawberry preserves into the cheesecake layer, creating a marbled effect.
Step 5: Bake the Brownies
-
Bake for 30-35 minutes or until the cheesecake layer is set and the center no longer jiggles.
-
A toothpick inserted into the center should come out mostly clean.
-
Allow the brownies to cool completely in the pan before lifting them out using the parchment paper overhang.
Step 6: Chill and Slice
-
Once cooled, refrigerate the brownies for at least 2 hours to firm up before slicing.
-
Slice into squares and serve chilled or at room temperature.
Notes
-
Room Temperature Ingredients: Ensure that cream cheese and eggs are at room temperature for a smooth cheesecake layer.
-
Don’t Overmix: Mix the brownie batter until just combined to maintain a fudgy texture.
-
Chill Before Slicing: Chilling makes slicing easier and helps the layers set properly.
-
Use Fresh Strawberries: If using fresh strawberry puree, cook it down slightly to concentrate the flavor.
