For the Brownie Base:

  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ⅓ cup cocoa powder

  • ½ cup all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

For the Cheesecake Layer:

  • 8 oz cream cheese, softened

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

For the Strawberry Swirl:

  • ½ cup strawberry preserves (or fresh strawberry puree)

  • 1 tbsp water (to thin, if needed)


Instructions

Step 1: Preheat the Oven

  • Preheat the oven to 350°F (175°C).

  • Line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.

Step 2: Prepare the Brownie Base

  1. In a mixing bowl, whisk together melted butter and sugar until smooth.

  2. Add eggs and vanilla extract, whisking until well combined.

  3. Sift in cocoa powder, flour, salt, and baking powder.

  4. Fold the dry ingredients into the wet ingredients until just combined (do not overmix).

  5. Pour the brownie batter into the prepared pan and spread evenly.

Step 3: Make the Cheesecake Layer

  1. In a separate bowl, beat the softened cream cheese and sugar until smooth and creamy.

  2. Add the egg and vanilla extract, beating until fully incorporated.

  3. Pour the cheesecake mixture over the brownie layer and gently spread it into an even layer.

Step 4: Create the Strawberry Swirl

  1. In a small bowl, stir the strawberry preserves with 1 tbsp of water to thin slightly.

  2. Drop spoonfuls of the strawberry mixture over the cheesecake layer.

  3. Use a toothpick or knife to gently swirl the strawberry preserves into the cheesecake layer, creating a marbled effect.

Step 5: Bake the Brownies

  • Bake for 30-35 minutes or until the cheesecake layer is set and the center no longer jiggles.

  • A toothpick inserted into the center should come out mostly clean.

  • Allow the brownies to cool completely in the pan before lifting them out using the parchment paper overhang.

Step 6: Chill and Slice

 

  • Once cooled, refrigerate the brownies for at least 2 hours to firm up before slicing.

  • Slice into squares and serve chilled or at room temperature.
