Ingredients

Scale

For the Brownie Layer

  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon salt

For the Cheesecake Layer

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract

For the Strawberry Swirl

  • ½ cup strawberry jam or preserves
  • 12 tablespoons water (if needed, to thin the jam)

Instructions

Step 1: Prepare the Brownie Layer

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and line it with parchment paper.
  2. In a mixing bowl, whisk together the melted butter, granulated sugar, eggs, and vanilla extract until smooth.
  3. Sift in the flour, cocoa powder, and salt. Stir until just combined.
  4. Pour the brownie batter into the prepared pan and spread evenly.

Step 2: Make the Cheesecake Layer
5. In another bowl, beat the cream cheese and sugar until smooth and creamy.
6. Add the egg and vanilla extract, mixing until fully combined.
7. Carefully spread the cheesecake mixture over the brownie layer.

Step 3: Add the Strawberry Swirl
8. In a small bowl, whisk the strawberry jam with water if it’s too thick.
9. Drop small dollops of jam onto the cheesecake layer. Use a skewer or the tip of a knife to swirl the jam gently into the cheesecake layer, creating a marble effect.

Step 4: Bake and Cool
10. Bake in the preheated oven for 35-40 minutes, or until the center is just set.
11. Remove from the oven and let cool to room temperature. Transfer to the refrigerator to chill for at least 2 hours before slicing.

Notes

  • Use Good-Quality Cocoa Powder: It makes a big difference in the brownie flavor.
  • Don’t Overmix: Stir each layer just until combined for the best texture.
  • Swirl with Care: Keep the strawberry swirl gentle to avoid blending the layers too much.
  • Chill Before Serving: This helps the layers set and makes slicing easier.
