Ingredients

Scale
  • 1 lb ground beef or ground chicken/turkey
  • 1 cup fresh spinach, finely chopped
  • 2 garlic cloves, minced
  • 1/3 cup breadcrumbs (or almond flour for a low-carb option)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 68 small mozzarella balls or 1/2 cup mozzarella, cubed
  • 2 tablespoons olive oil (for cooking)
  • Marinara sauce, for serving (optional)
  • Fresh parsley, for garnish

Instructions

Step 1: Prepare the Meatball Mixture

  1. In a large mixing bowl, combine the ground meat, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, smoked paprika, salt, and pepper.
  2. Mix until well combined but don’t overmix to keep the meatballs tender.

Step 2: Stuff with Mozzarella
3. Take a small portion of the meat mixture and flatten it in your hand.
4. Place a mozzarella ball or cube in the center and wrap the meat mixture around it, forming a ball. Ensure the cheese is completely sealed inside. Repeat with the remaining mixture.

Step 3: Cook the Meatballs
5. Heat olive oil in a large skillet over medium heat.
6. Add the meatballs and cook for 3-4 minutes per side until browned.

  • Option: If baking, place the meatballs on a lined baking sheet and bake in a preheated 400°F (200°C) oven for 15-18 minutes, or until cooked through.

Step 4: Serve and Garnish
7. Serve the meatballs warm with marinara sauce on the side or over pasta.
8. Garnish with fresh parsley and a sprinkle of Parmesan for extra flavor.

Notes

  • Seal Well: Ensure the cheese is fully enclosed to avoid it melting out during cooking.
  • Customize the Meat: Ground chicken or turkey works well for a lighter option.
  • Add More Veggies: Mix in finely grated zucchini or carrots for added nutrition.
  • Sauce It Up: Simmer the cooked meatballs in marinara sauce for extra flavor.
