Ingredients
- Fresh Spinach (1 cup, packed) – Adds freshness and a slight earthiness.
- Feta Cheese (½ cup, crumbled) – Creamy, tangy, and salty.
- Mozzarella Cheese (½ cup, shredded) – Melts beautifully for that gooey texture.
- Butter (2 tbsp, softened) – For crisping up the bread.
- Garlic (1 clove, minced) – Enhances the spinach with a rich aroma.
- Bread (4 slices, sturdy like sourdough or ciabatta) – Holds up well to the cheese and spinach.
- Olive Oil (1 tsp) – For sautéing the spinach.
- Salt & Pepper (to taste) – Enhances all the flavors.
Instructions
Step 1: Sauté the Spinach
- Heat 1 teaspoon of olive oil in a small pan over medium heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Toss in the spinach and sauté for 1-2 minutes until wilted. Season with a pinch of salt and pepper. Set aside.
Step 2: Assemble the Sandwich
- Butter one side of each bread slice.
- On the unbuttered side of two slices, layer feta cheese, sautéed spinach, and shredded mozzarella.
- Place the remaining bread slices on top, buttered side facing out.
Step 3: Grill to Perfection
- Heat a skillet or griddle over medium-low heat.
- Place the sandwiches in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until golden brown and crispy.
- Flip carefully and cook the other side until the cheese is fully melted.
Step 4: Serve and Enjoy
- Remove from the pan, let cool slightly, then slice in half.
- Serve hot with your favorite soup, salad, or a side of dipping sauce.
Notes
- Use Good Bread: A sturdy, rustic bread works best.
- Low and Slow Cooking: This prevents burning while allowing the cheese to melt properly.
- Don’t Overstuff: Too much filling makes it harder to grill evenly.
- Press Lightly: A gentle press helps crisp up the bread without squeezing out the filling.
