  • 1 tbsp lemon zest (from 1 large lemon)

  • 23 tbsp fresh lemon juice

  • ½ tsp lemon zest


Instructions

Step 1: Prepare the Ingredients

  • Preheat oven to 350°F (175°C).

  • Line a baking sheet with parchment paper and set aside.

Step 2: Make the Cookie Dough

  • In a large mixing bowl, beat together softened butter, cream cheese, and granulated sugar until light and fluffy, about 2-3 minutes.

  • Add the egg, lemon zest, and lemon juice. Beat until well combined.

Step 3: Combine Dry Ingredients

  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

  • Do not overmix to keep the cookies tender.

Step 4: Chill the Dough

  • Cover the dough and refrigerate for 30 minutes to 1 hour. This helps prevent spreading and enhances the cookie texture.

Step 5: Bake the Cookies

  • Scoop dough using a tablespoon or small cookie scoop and place on the prepared baking sheet, spacing them about 2 inches apart.

  • Lightly flatten each dough ball with the back of a spoon to create an even surface.

  • Bake for 10-12 minutes, or until the edges are set and the tops look slightly underbaked.
