Instructions
Step 1: Make the Chocolate Cake
- Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract. Mix until combined.
- Stir in hot water (batter will be thin, but that’s okay!).
- Divide batter evenly between the cake pans.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a cooling rack.
Step 2: Prepare the Marshmallow Frosting
- In a mixing bowl, beat softened butter until creamy.
- Add marshmallow fluff, powdered sugar, vanilla extract, and heavy cream. Beat until light and fluffy.
Step 3: Assemble the Cake
- Place one cake layer on a serving plate. Spread half of the marshmallow frosting on top.
- Sprinkle with crushed graham crackers.
- Place the second cake layer on top and spread the remaining frosting over the top and sides.
Step 4: Add the Toppings
- Drizzle melted chocolate over the cake.
- Sprinkle more graham cracker crumbs and mini marshmallows on top.
- For extra gooeyness, toast the marshmallows with a kitchen torch (optional).
Notes
- Use hot water in the batter – It enhances the chocolate flavor.
- Don’t overmix the batter – This keeps the cake soft.
- Let the cakes cool completely before frosting – To prevent melting.
- Toast the marshmallows – If you want that authentic campfire feel!
