Ingredients

  • Beef Stew Meat (1 lb, cubed) – Tender and flavorful when slow-cooked.
  • Olive Oil (1 tbsp) – For browning the beef.
  • Yellow Onion (1, chopped) – Adds depth to the soup.
  • Garlic (3 cloves, minced) – Boosts flavor.
  • Green Cabbage (½ head, chopped) – A nutritious, hearty base.
  • Diced Tomatoes (1 can, 14 oz) – Adds richness and acidity.
  • Tomato Paste (2 tbsp) – Enhances the depth of the broth.
  • Beef Broth (4 cups) – Forms a flavorful base.
  • Carrots (2, sliced) – Adds sweetness and texture.
  • Celery (2 stalks, chopped) – Brings a nice crunch.
  • Jalapeño (1, diced, optional) – For extra heat.
  • Paprika (1 tsp) – A smoky, spicy touch.
  • Cumin (1 tsp) – Adds warmth and depth.
  • Chili Powder (1 tsp) – Enhances the spice level.
  • Salt & Black Pepper (to taste) – Adjust as needed.
  • Bay Leaf (1, optional) – For extra aromatic depth.

 

  • Red Pepper Flakes (½ tsp, optional) – For a spicier kick.

Instructions

Step 1: Brown the Beef

  • Heat olive oil in a skillet over medium-high heat.
  • Sear the beef cubes for 2–3 minutes on each side until browned. (This step enhances flavor but can be skipped if short on time.)

Step 2: Add Ingredients to Slow Cooker

  • Transfer the beef to the slow cooker.
  • Add onions, garlic, cabbage, diced tomatoes, tomato paste, beef broth, carrots, celery, and jalapeño.
  • Sprinkle in paprika, cumin, chili powder, salt, black pepper, red pepper flakes, and add the bay leaf.

Step 3: Slow Cook the Soup

  • Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the beef is tender and flavors meld.

Step 4: Final Taste & Serve

 

  • Remove the bay leaf.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with fresh parsley or extra red pepper flakes for spice lovers!
