This Slow Cooker Spicy Cabbage Beef Soup is a hearty, comforting meal that’s bursting with flavor. 1 lb beef stew meat, cubed
1 small head of cabbage, chopped
1 large onion, diced
3 cloves garlic, minced
1 red bell pepper, chopped
2 large carrots, sliced
1 can (14.5 oz) diced tomatoes, undrained
6 cups beef broth
2 tbsp tomato paste
1 tsp smoked paprika
1/2 tsp red pepper flakes (adjust to taste)
1 tsp dried thyme
Salt and pepper, to taste
1–2 tbsp olive oil (optional, for browning the meat)

Instructions

Step 1: Brown the Beef (Optional)

Heat a large skillet over medium-high heat and add olive oil.
Brown the beef cubes on all sides for extra flavor, then transfer them to the slow cooker. (This step is optional, but it adds richness to the soup.)

Step 2: Add Ingredients to the Slow Cooker 3. Add the cabbage, onion, garlic, bell pepper, carrots, diced tomatoes, and tomato paste to the slow cooker. 4. Pour in the beef broth and stir to combine.

Step 3: Season the Soup 5. Add smoked paprika, red pepper flakes, thyme, salt, and pepper. Stir well.

Step 4: Slow Cook the Soup 6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and the vegetables are soft.

Step 5: Adjust Seasoning and Serve 7. Taste the soup and adjust the seasoning if needed. Add more red pepper flakes if you prefer extra spice. 8. Serve hot, garnished with fresh parsley or a dollop of sour cream, if desired.
