Ingredients

Scale
  • 4 cups frozen corn kernels (about 2 lbs): Sweet and tender, perfect for this dish.
  • 1 (8 oz) block cream cheese: Softened and cubed for easy melting.
  • ½ cup unsalted butter: Adds richness and flavor.
  • 1 cup whole milk: For a creamy base.
  • ¼ cup granulated sugar: Enhances the natural sweetness of the corn.
  • ½ teaspoon salt: Balances the flavors.
  • ¼ teaspoon black pepper: For a subtle kick.
  • 2 tablespoons all-purpose flour (optional): For a slightly thicker consistency.

Instructions

Step 1: Add Ingredients to the Slow Cooker

  1. Place the corn, cream cheese, butter, sugar, salt, and pepper in your slow cooker.
  2. Pour the milk over the top.

Step 2: Cook Low and Slow

  1. Cover the slow cooker and set it to low heat.
  2. Cook for 4 hours, stirring occasionally to ensure the cream cheese and butter melt evenly.

Step 3: Thicken the Creamed Corn (Optional)

  • If you’d like a thicker consistency, mix 2 tablespoons of all-purpose flour with 3 tablespoons of water to create a slurry.
  • Stir the slurry into the creamed corn during the last 30 minutes of cooking.

Step 4: Serve and Enjoy

  • Once the mixture is warm, creamy, and well combined, give it a final stir.
  • Serve directly from the slow cooker or transfer to a serving dish.

Notes

  • Use Fresh Corn: If you have fresh corn, cut it off the cob and use it instead of frozen for an extra-sweet flavor.
  • Don’t Skip Stirring: Stir occasionally to prevent sticking and ensure even cooking.
  • Add a Twist: Sprinkle in shredded cheese or a pinch of cayenne pepper for added flavor.
