For the Beef & Broth:

  • 1.5 lbs beef chuck roast or flank steak, thinly sliced
  • 4 cups beef broth
  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp honey or brown sugar
  • ½ tsp crushed red pepper flakes (optional, for heat)
  • 2 tbsp rice vinegar
  • 1 tsp black pepper
  • 1 cup mushrooms, sliced
  • 2 carrots, julienned
  • ½ cup green onions, sliced (plus extra for garnish)

For the Noodles & Toppings:

  • 3 packs ramen noodles (discard seasoning packets)
  • 1 cup bok choy or spinach
  • Soft-boiled eggs (for serving)
  • Sesame seeds (for garnish)

Instructions

Step 1: Prepare the Beef & Broth
Place the sliced beef in the slow cooker. Add beef broth, soy sauce, oyster sauce, hoisin sauce, sesame oil, garlic, ginger, honey, red pepper flakes, rice vinegar, black pepper, mushrooms, carrots, and green onions. Stir to combine.

Step 2: Slow Cook
Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and flavors have melded.

Step 3: Add the Noodles & Greens
About 15 minutes before serving, add the ramen noodles and bok choy (or spinach) to the slow cooker. Stir gently to submerge the noodles. Let them cook until tender, about 5-7 minutes.

Step 4: Serve & Garnish
Ladle the ramen into bowls. Top with soft-boiled eggs, extra green onions, sesame seeds, and any other favorite toppings. Enjoy hot!
