Ingredients
Scale
- 2 lbs beef tips or stew meat, cubed
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup water
- 1/4 cup all-purpose flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika (optional)
- Salt and pepper, to taste
- 1/4 cup heavy cream (optional, for a creamier gravy)
- Fresh parsley, chopped (for garnish)
Instructions
Step 1: Sear the Beef
- Heat olive oil in a large skillet over medium-high heat.
- Season the beef tips with salt and pepper, then sear them in the skillet until browned on all sides. Work in batches if necessary to avoid overcrowding.
- Transfer the browned beef to your slow cooker.
Step 2: Sauté the Aromatics
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
- Stir in the flour and cook for 1 minute to form a roux.
Step 3: Prepare the Gravy
- Gradually whisk in the beef broth and water, stirring continuously to avoid lumps.
- Add Worcestershire sauce, soy sauce, thyme, and paprika, then simmer for 2-3 minutes until slightly thickened.
Step 4: Slow Cook
- Pour the gravy over the beef tips in the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender.
Step 5: Add the Final Touches
- If desired, stir in heavy cream during the last 15 minutes of cooking for a creamier gravy.
- Taste and adjust seasoning with salt and pepper, if needed.
Step 6: Serve and Enjoy
- Garnish with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.
Notes
- Choose the Right Cut: Use beef chuck or stew meat for the best tenderness.
- Brown the Meat: Don’t skip the searing step—it adds depth to the flavor.
- Make Ahead: This dish reheats beautifully and can even be made a day in advance.
- Thicken the Gravy: If the gravy isn’t thick enough, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in during the last 30 minutes of cooking.
