For the Salmon

For the Tomato Lemon Sauce

- Cherry Tomatoes (1 cup, halved) – Sweet and juicy.
- Crushed Tomatoes (½ cup) – Forms the base of the sauce.

- Lemon Juice (2 tbsp) – Provides a fresh, tangy kick.

Instructions
Step 1: Season the Salmon
Pat the salmon fillets dry with a paper towel. Season both sides with garlic powder, salt, and black pepper.
Step 2: Sear the Salmon
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4 minutes until crispy. Flip and cook for another 3–4 minutes until golden and fully cooked. Remove from the skillet and set aside.
Step 3: Prepare the Tomato Lemon Sauce
In the same skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 3–4 minutes until they begin to soften. Stir in crushed tomatoes, lemon zest, lemon juice, salt, pepper, and red pepper flakes (if using). Let simmer for 5 minutes, stirring occasionally.
Step 4: Add Fresh Herbs & Finish
Stir in chopped basil and let the sauce cook for another minute. Taste and adjust seasoning if needed.
