- 2 tablespoons olive oil: For frying.
Ingredients for Chive and Garlic Sauce
For the sauce, you’ll need:
- 1/2 cup sour cream: Creates a creamy base.
- 2 tablespoons mayonnaise: Enhances richness.
- 1 tablespoon fresh chives, finely chopped: Adds a mild oniony flavor.
- 1 garlic clove, minced: For boldness.
- 1 tablespoon lemon juice: Brightens up the flavors.
- Salt and pepper, to taste
Instructions
Step 1: Make the Sauce
- In a small bowl, whisk together the sour cream, mayonnaise, chives, garlic, and lemon juice.
- Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
Step 2: Prepare the Salmon Cakes
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, parsley, paprika, salt, and pepper.
- Mix until well combined. If the mixture is too dry, add a bit more mayonnaise. If too wet, add more breadcrumbs.
Step 3: Shape the Cakes
- Divide the mixture into 6-8 portions and shape each into a patty about 1/2-inch thick.
- Place the patties on a plate and refrigerate for 15 minutes to help them firm up.
Step 4: Cook the Salmon Cakes
- Heat olive oil in a skillet over medium heat.
- Cook the salmon cakes in batches, about 3-4 minutes per side, until golden brown and cooked through.
- Transfer to a plate lined with paper towels to drain excess oil.
Step 5: Serve
- Plate the salmon cakes and drizzle with the chilled chive and garlic sauce.
- Garnish with additional chives or parsley, if desired.
Notes
- Use Fresh Salmon: If using fresh salmon, bake or steam it first, then flake it for the mixture.
- Don’t Overmix: Gently combine ingredients to keep the cakes tender.
- Adjust the Sauce: Add more garlic or chives to suit your taste.
