Ingredients

  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone baking mat.

Step 2: Mix the Wet Ingredients
3. In a large mixing bowl, whisk together the melted butter, pumpkin puree, granulated sugar, brown sugar, vanilla extract, and egg until smooth.

Step 3: Combine the Dry Ingredients
4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.

Step 4: Form the Dough
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the chocolate chips with a spatula.

Step 5: Scoop and Bake
7. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
8. Bake for 10-12 minutes, or until the edges are set and the tops look slightly puffy. The cookies will continue to firm up as they cool.

Step 6: Cool and Enjoy
9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
