- 1/2 cup shredded unsweetened coconut
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 2 large eggs
- 1/2 cup coconut milk (or regular milk)
- 1/4 cup coconut oil, melted (or vegetable oil)
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained (reserve juice for glaze, optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a 9×5-inch loaf pan with parchment paper or grease it lightly.
Step 2: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and shredded coconut.
Step 3: Combine Wet Ingredients
- In a separate bowl, whisk the eggs, granulated sugar, brown sugar, coconut milk, coconut oil, and vanilla extract until smooth.
Step 4: Combine and Fold
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the crushed pineapple, being careful not to overmix.
Step 5: Bake the Bread
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Glaze (Optional)
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- For an optional glaze, mix 1/2 cup powdered sugar with 1-2 tablespoons of reserved pineapple juice and drizzle over the cooled loaf.
