  • 1 lb thinly sliced beef strips (such as flank or sirloin, cut into bite-sized pieces)
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup sliced mushrooms (optional)
  • 3 tablespoons olive oil (divided)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1/2 cup beef broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
  • 1 cup shredded provolone cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley or green onions (for garnish)

Instructions

Step 1: Cook the Tortellini

  1. Bring a large pot of salted water to a boil and cook the tortellini according to the package instructions. Drain and set aside.

Step 2: Sear the Beef

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips, season with salt and pepper, and cook for 2-3 minutes until browned. Remove from the skillet and set aside.

Step 3: Sauté the Vegetables

  1. In the same skillet, add another tablespoon of olive oil and sauté the onions, bell peppers, and mushrooms until softened, about 5 minutes. Remove and set aside with the beef.

Step 4: Make the Creamy Provolone Sauce

  1. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute until slightly golden.
  2. Slowly whisk in the milk and beef broth, ensuring no lumps form. Bring the mixture to a simmer, stirring frequently, until thickened.
  3. Stir in the garlic powder, Worcestershire sauce, red pepper flakes (if using), and both cheeses. Continue stirring until the cheese is fully melted and the sauce is smooth. Taste and adjust seasoning with salt and pepper.

Step 5: Combine Everything

  1. Add the cooked tortellini, beef, and sautéed vegetables to the skillet. Pour the creamy provolone sauce over the top and toss gently to coat everything evenly.

Step 6: Serve

  1. Garnish with fresh parsley or green onions and serve warm. Enjoy!
