Perfect for holiday parties, gifting, or whenever you’re craving something truly indulgent!

Ingredients

Scale

For the Brownie Layer:

  • 1 box brownie mix (plus ingredients listed on the package)
  • 1/4 cup all-purpose flour (optional, for firmer brownies)

For the Pecan Pie Filling:

  • 1 cup chopped pecans
  • 1/3 cup light corn syrup
  • 1/3 cup brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Coating:

  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening (optional, for smooth coating)

Instructions

Step 1: Bake the Brownies

  1. Preheat your oven to 350°F (175°C) and prepare the brownie mix according to the package instructions.
  2. Add 1/4 cup of flour to the batter if you want a firmer brownie shell.
  3. Pour the batter into a greased muffin tin, filling each cavity about 1/2 full.
  4. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out mostly clean. Let the brownies cool completely.

Step 2: Make the Pecan Pie Filling

  1. In a mixing bowl, combine chopped pecans, corn syrup, brown sugar, melted butter, vanilla extract, and salt. Stir until well combined.
  2. Refrigerate the filling for 15-20 minutes to firm up slightly.

Step 3: Assemble the Brownie Bombs

  1. Once the brownies are cool, scoop out the center of each one, creating a small cavity. Save the brownie scraps for snacking or crumbling on ice cream!
  2. Fill each cavity with a spoonful of the pecan pie filling.
  3. Gently shape the brownies around the filling, rolling them into balls.

Step 4: Coat in Chocolate

  1. Melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  2. Dip each brownie bomb into the melted chocolate, using a fork or skewer to coat evenly.
  3. Place the coated bombs on a parchment-lined baking sheet and let the chocolate set at room temperature or in the fridge.

Step 5: Serve and Enjoy

  1. Once the chocolate is firm, transfer the brownie bombs to a serving platter.
  2. Garnish with extra chopped pecans, if desired.

Notes

  • Don’t Overbake the Brownies: Slightly underbaked brownies make it easier to mold them into bombs.
  • Chill for Easy Rolling: Refrigerating the brownie pieces before rolling can prevent sticking.
  • Customize the Chocolate: Use white chocolate or milk chocolate for a sweeter coating.
  • Add a Touch of Salt: Sprinkle flaky sea salt on top for a gourmet touch.
