Description

Creamy, cheesy, and full of flavorful crab and artichoke goodness, this Parmesan Crab and Artichoke Sourdough Toast is a game-changer for brunch, lunch, or a quick and fancy snack! With crispy sourdough as the base and a rich, savory topping, this recipe is perfect for seafood lovers looking for something deliciously indulgent yet easy to make.

Ingredients

Scale
  • 4 thick slices of sourdough bread
  • 1 cup cooked crab meat (lump or claw, drained if needed)
  • ½ cup canned or jarred artichoke hearts, drained and roughly chopped
  • 4 oz cream cheese, softened
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon paprika (for a bit of smoky flavor)
  • ¼ teaspoon black pepper
  • 12 tablespoons chopped fresh parsley (for garnish)

Instructions

Step 1: Prepare the Creamy Crab and Artichoke Mixture

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the crab meat, chopped artichoke hearts, cream cheese, Parmesan, mozzarella, mayonnaise, lemon juice, minced garlic, paprika, and black pepper. Mix until well combined.

Step 2: Toast the Sourdough

  1. Lightly toast the sourdough slices in the oven or using a toaster until they are golden but still slightly soft in the center.

Step 3: Add the Topping

  1. Spread a generous layer of the crab and artichoke mixture evenly over each slice of toasted sourdough.

Step 4: Bake Until Golden

  1. Place the topped sourdough slices on a baking sheet. Bake for 8-10 minutes or until the topping is warm and bubbly.
  2. For a golden-brown finish, switch to the broiler for 1-2 minutes, but keep an eye on it to prevent burning.

Step 5: Garnish and Serve

  1. Remove from the oven and sprinkle with fresh parsley. Serve warm and enjoy!

Notes

  • Use Fresh Sourdough: The slight tang of sourdough pairs perfectly with the rich topping.
  • Don’t Overload the Toast: A thick layer of topping is great, but too much may cause it to slide off.
  • Add a Kick: Sprinkle with red pepper flakes if you enjoy a bit of heat.
  • Make it Ahead: You can prepare the crab mixture up to a day in advance and store it in the fridge until ready to use.
