  • ½ cup granulated sugar (for rolling)

For the Cream Filling:

  • ¼ cup unsalted butter, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract (or almond extract)
  • 1 tablespoon milk or heavy cream
  • Food coloring (optional, for a decorative touch)

Instructions

Step 1: Make the Wafers

  1. In a large bowl, cream the butter until smooth.
  2. Add heavy cream and mix until combined.
  3. Gradually add the flour and salt, mixing until a soft dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.

Step 2: Roll and Cut the Dough

  1. Preheat your oven to 375°F (190°C).
  2. Lightly flour a surface and roll out the chilled dough to about 1/8-inch thickness.
  3. Use a 1 ½-inch round cookie cutter to cut out small circles.
  4. Roll each circle in granulated sugar and place them on a parchment-lined baking sheet.

Step 3: Bake the Wafers

  1. Prick each wafer with a fork 2-3 times to prevent puffing.
  2. Bake for 7-9 minutes, or until the edges are just lightly golden.
  3. Let the wafers cool completely on a wire rack.

Step 4: Make the Cream Filling

  1. In a bowl, beat butter until creamy.
  2. Gradually add powdered sugar and mix until fluffy.
  3. Stir in vanilla extract and milk, beating until smooth. Add food coloring if desired.

Step 5: Assemble the Wafers

  1. Spread or pipe a small amount of cream filling onto the flat side of one wafer.
  2. Gently press another wafer on top to create a sandwich.
  3. Repeat until all wafers are paired.
