- 2 cups all-purpose flour

- ½ cup granulated sugar (for rolling)

- ¾ cup powdered sugar
- 1 teaspoon vanilla extract (or almond extract)
- 1 tablespoon milk or heavy cream
- Food coloring (optional, for a decorative touch)
Instructions
Step 1: Make the Wafers
- In a large bowl, cream the butter until smooth.
- Add heavy cream and mix until combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
Step 2: Roll and Cut the Dough
- Preheat your oven to 375°F (190°C).
- Lightly flour a surface and roll out the chilled dough to about 1/8-inch thickness.
- Use a 1 ½-inch round cookie cutter to cut out small circles.
- Roll each circle in granulated sugar and place them on a parchment-lined baking sheet.
Step 3: Bake the Wafers
- Prick each wafer with a fork 2-3 times to prevent puffing.
- Bake for 7-9 minutes, or until the edges are just lightly golden.
- Let the wafers cool completely on a wire rack.
Step 4: Make the Cream Filling
- In a bowl, beat butter until creamy.
- Gradually add powdered sugar and mix until fluffy.
- Stir in vanilla extract and milk, beating until smooth. Add food coloring if desired.
Step 5: Assemble the Wafers
- Spread or pipe a small amount of cream filling onto the flat side of one wafer.
- Gently press another wafer on top to create a sandwich.
- Repeat until all wafers are paired.
