Ingredients
- 2 dozen fresh oysters (shucked, with their liquor)
- 4 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground white or black pepper
- 1/4 teaspoon paprika (optional, for added depth)
- 1/4 teaspoon cayenne pepper (optional, for a hint of spice)
- 2 tablespoons chopped fresh parsley, for garnish
- Crackers or crusty bread, for serving
Instructions
Step 1: Sauté the Aromatics
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and garlic. Sauté until the onion is soft and translucent, about 3-5 minutes.
Step 2: Warm the Liquids
3. Reduce the heat to low and slowly stir in the milk and heavy cream.
4. Heat gently, stirring occasionally, until the mixture is warm but not boiling.
Step 3: Add the Oysters
5. Add the oysters and their liquor to the pot. Cook for 3-5 minutes, or until the oysters curl at the edges and are plump. Be careful not to overcook.
Step 4: Season the Stew
6. Stir in the salt, pepper, paprika, and cayenne (if using). Adjust seasonings to taste.
Step 5: Serve and Garnish
7. Ladle the oyster stew into bowls. Garnish with fresh parsley and serve warm with crackers or crusty bread.
Notes
- Use Fresh Oysters: For the best flavor, use freshly shucked oysters and their natural liquor.
- Don’t Let It Boil: Keep the heat low to prevent the milk and cream from curdling.
- Add Your Twist: A splash of hot sauce or a squeeze of lemon can elevate the flavors.
