For the Steak:
- 4 beef steaks (sirloin, cube, or chuck): Choose your preferred cut for smothering.
- 1 teaspoon garlic powder: For seasoning.
- 1/2 teaspoon paprika: Adds a subtle warmth and color.
- Salt and pepper, to taste: To enhance the flavor.
- 2 tablespoons all-purpose flour: For dredging.
- 2 tablespoons olive oil: For searing the steaks.
For the Onion Gravy:
- 2 large onions, thinly sliced: The star of the gravy!
- 3 tablespoons unsalted butter: For sautéing the onions.
- 2 tablespoons all-purpose flour: To thicken the gravy.
- 3 cups beef broth: For a rich, savory base.
- 1 teaspoon Worcestershire sauce: Adds depth of flavor.
- 1/2 teaspoon dried thyme: For a hint of earthiness.
- Salt and pepper, to taste: To adjust the seasoning.
Instructions
Step 1: Prepare the Steaks
- Pat the steaks dry with paper towels and season both sides with garlic powder, paprika, salt, and pepper.
- Lightly dredge each steak in flour, shaking off any excess.
Step 2: Sear the Steaks
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the steaks for 2-3 minutes per side, until browned. Remove from the skillet and set aside.
Step 3: Caramelize the Onions
- In the same skillet, melt the butter over medium heat.
- Add the sliced onions and cook, stirring occasionally, for 8-10 minutes until golden and caramelized.
Step 4: Make the Gravy
- Sprinkle the flour over the onions and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.
- Gradually whisk in the beef broth, ensuring no lumps form. Add the Worcestershire sauce, thyme, salt, and pepper.
- Simmer the gravy for 5-7 minutes, until thickened.
Step 5: Smother the Steaks
- Return the steaks to the skillet, nestling them into the onion gravy.
- Reduce the heat to low, cover, and simmer for 10-15 minutes, or until the steaks are tender and cooked to your desired doneness.
Notes
- Choose the Right Steak: Opt for tender cuts like sirloin for quick cooking, or use chuck for a longer braise.
- Caramelize Slowly: Take your time with the onions to achieve their deep, sweet flavor.
- Thicken to Taste: If you prefer a thicker gravy, let it simmer a bit longer.
- Make It Ahead: The flavors deepen as it sits, making this a great make-ahead dish.
