Ingredients
For the Salmon:
-
4 salmon fillets (about 5 oz each, skin-on or skinless)
-
1 tbsp olive oil
-
½ tsp salt
-
½ tsp black pepper
-
½ tsp garlic powder
-
½ tsp paprika (for color and warmth)
-
Juice of ½ lemon
For the Lemon Orzo:
-
1 tbsp olive oil (use the same skillet)
-
2 cloves garlic, minced
-
1 cup uncooked orzo pasta
-
2¼ cups low-sodium chicken or vegetable broth
-
Zest of 1 lemon
-
Juice of 1 lemon
-
½ tsp salt (or to taste)
-
¼ tsp black pepper
-
¼ cup grated Parmesan cheese
-
2 tbsp heavy cream or half-and-half (optional for creaminess)
-
2 tbsp chopped parsley (for garnish)
-
Lemon wedges (for serving)
Instructions
Step 1: Season the Salmon
Pat the salmon fillets dry with paper towels.
Rub both sides with olive oil, then sprinkle with salt, pepper, garlic powder, and paprika.
Squeeze the juice of half a lemon over the fillets for extra brightness.
Step 2: Sear the Salmon
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Place salmon fillets skin-side down (if applicable) and sear for 3–4 minutes without moving.
Flip and cook for another 2–3 minutes, depending on thickness.
Remove salmon from the skillet and set aside on a plate. Don’t worry if it’s slightly underdone—it will finish cooking later.
Step 3: Sauté the Garlic and Toast the Orzo
In the same skillet, reduce heat to medium and add another drizzle of oil if needed.
Add minced garlic and cook for about 30 seconds until fragrant.
Stir in the orzo and cook for 2–3 minutes, stirring frequently, until lightly toasted and golden.
Step 4: Cook the Orzo
Pour in the broth, lemon zest, lemon juice, salt, and pepper.
Bring to a gentle boil, then reduce heat to low.
Cover and simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 5: Finish the Dish
Stir in the Parmesan and optional cream for a silky texture.
Taste and adjust seasoning if needed.
Nestle the seared salmon fillets back into the orzo and cover.
Let everything heat through for another 2–3 minutes, allowing the salmon to finish cooking.
Step 6: Garnish and Serve
Remove from heat and sprinkle fresh parsley over the top.
Serve with lemon wedges on the side and an extra sprinkle of Parmesan, if desired.
Notes
Use Fresh Salmon – It’s the star of the dish, so go for quality fillets.
Sear First – Getting a good sear adds flavor and texture to the salmon.
Don’t Overcook – Salmon should flake easily but stay moist inside.
Stir the Orzo – Prevents sticking and ensures even cooking.
Add Cream Last – It helps bring richness without curdling.
