  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1/4 cup freshly squeezed lemon juice (about 1 large lemon)
  • Zest of 1 lemon
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons heavy cream or plain Greek yogurt (optional for extra creaminess)
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

Step 1: Season and Cook the Salmon

  1. Pat the salmon fillets dry and season with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the salmon fillets skin-side down and cook for 3-4 minutes per side, or until golden and cooked to your preferred doneness. Remove from the skillet and set aside.

Step 2: Cook the Orzo

  1. In the same skillet, add the orzo and toast for 1-2 minutes, stirring frequently.
  2. Pour in the chicken or vegetable broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.

Step 3: Add the Lemon Flavor

  1. Stir in the lemon juice, lemon zest, Parmesan cheese, and heavy cream (if using). Season with salt and pepper to taste.

Step 4: Return the Salmon

  1. Place the cooked salmon fillets back into the skillet on top of the orzo.
  2. Sprinkle with fresh parsley and let everything warm together for 2-3 minutes.

Step 5: Serve and Enjoy
Serve the salmon and orzo immediately, garnished with extra parsley and a lemon wedge, if desired.
