Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 1 cup elbow macaroni (uncooked)
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1 cup Velveeta cheese, cubed
- 1/2 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 teaspoon mustard (yellow or Dijon)
- Salt and pepper, to taste
- Optional toppings: Chopped pickles or fresh parsley.
Instructions
Step 1: Cook the Ground Beef
- Heat olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat and set aside.
Step 2: Sauté Aromatics
3. In the same pot, add diced onions and sauté until soft and translucent.
4. Stir in garlic and cook for another minute until fragrant.
Step 3: Add Broth and Pasta
5. Pour in the beef broth and water, stirring to combine.
6. Bring to a boil, then add the uncooked elbow macaroni and diced tomatoes.
7. Reduce heat to medium and simmer for 10 minutes, or until the pasta is tender.
Step 4: Add Cheese and Cream

9. Add the Worcestershire sauce and mustard, stirring until the cheese is melted and the soup is creamy.
Step 5: Season and Serve
