Ingredients
For the Shrimp:
- 1 lb shrimp (peeled & deveined)
- 1 ½ teaspoons Old Bay seasoning
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 tablespoon olive oil
- Juice of ½ lime
For the Cilantro Lime Rice:
- 1 cup cooked rice (white or brown)
- Juice of ½ lime
- ¼ cup chopped fresh cilantro
- ½ teaspoon salt
For the Slaw:
- 1 cup shredded cabbage (green or purple)
- ¼ cup shredded carrots
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- ½ teaspoon honey
- Salt & pepper to taste
For the Burrito Assembly:
- 4 large flour tortillas
- 1 avocado (sliced)
- ½ cup shredded cheese (cheddar, Monterey Jack, or a blend)
- ¼ cup sour cream or Greek yogurt
- ½ cup salsa or pico de gallo
Instructions
In a bowl, toss shrimp with Old Bay seasoning, garlic powder, smoked paprika, and lime juice. Heat olive oil in a skillet over medium heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove from heat.
In a bowl, mix cooked rice with lime juice, chopped cilantro, and salt. Set aside.
In another bowl, combine shredded cabbage, carrots, mayonnaise, lime juice, honey, salt, and pepper. Mix well and let sit for a few minutes to absorb the flavors.
Heat the tortillas in a dry skillet for about 15 seconds on each side or until warm and pliable.
Lay a warm tortilla on a flat surface. Add a scoop of cilantro lime rice, a portion of shrimp, a handful of slaw, avocado slices, shredded cheese, and a dollop of sour cream or Greek yogurt. Drizzle with salsa or pico de gallo.
Fold in the sides of the tortilla, then roll it tightly from the bottom up. Slice in half and enjoy!
