Instructions
1. Prepare the Oatmeal Mixture
In a bowl, pour boiling water over the oats and let them sit for 10 minutes to soften.
2. Make the Cake Batter
In a large bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs and vanilla, mixing until smooth. Stir in the softened oat mixture.
3. Combine Dry Ingredients
In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
4. Bake the Cake
Preheat oven to 350°F (175°C). Grease two 9-inch cake pans and divide the batter evenly. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cakes cool completely.
5. Make the Cream Filling
Beat the butter until smooth. Add marshmallow fluff, powdered sugar, heavy cream, and vanilla, mixing until light and fluffy.
6. Assemble the Cake
Spread the cream filling evenly over one cake layer. Place the second layer on top.
7. Frost the Cake (Optional)
For an extra indulgent touch, make the frosting by beating cream cheese, butter, powdered sugar, and vanilla together. Spread over the cake or just on top for a semi-naked look.
8. Serve and Enjoy!
Slice and enjoy this nostalgic, bakery-style Oatmeal Cream Pie Cake!

- Don’t Overmix – Stir just until combined for a tender crumb
