Ingredients
For the Dough:
- 3 cups all-purpose flour
- 1 packet (2¼ teaspoons) active dry yeast
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup warm water (110°F/45°C)
- 1 tablespoon olive oil
For the Filling:
- 8 mozzarella cheese sticks (string cheese), halved
For the Baking Soda Bath:
- 4 cups water
- ¼ cup baking soda
For the Topping:
- 1 egg, beaten (for egg wash)
- Coarse salt, for sprinkling
- 2 tablespoons melted butter (optional, for brushing)
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
- Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for 1 hour or until doubled in size.
Step 2: Prepare the Baking Soda Bath
5. In a large pot, bring 4 cups of water to a boil. Stir in the baking soda and reduce to a simmer.
Step 3: Shape the Pretzels
6. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
7. Divide the dough into 16 equal pieces. Roll each piece into a rope about 8-10 inches long.
8. Place a piece of mozzarella in the center of the rope. Carefully pinch and seal the dough around the cheese, ensuring there are no gaps. Shape into a pretzel or keep it as a simple log.
Step 4: Boil the Pretzels
9. Dip each pretzel in the simmering baking soda bath for 20-30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
Step 5: Add the Toppings
10. Brush each pretzel with the beaten egg and sprinkle with coarse salt.
Step 6: Bake and Serve
11. Bake in the preheated oven for 12-15 minutes, or until golden brown.
12. Brush with melted butter after baking for extra flavor (optional). Serve warm.
