- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1–2 drops green food coloring (optional, for a minty hue)
- 1 1/2 cups semisweet chocolate chips
- 1/2 cup mint chocolate chips or chopped mint-flavored chocolate
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
Step 2: Mix the Dry Ingredients
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Step 3: Cream Butter and Sugars
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
Step 4: Add Wet Ingredients
- Beat in the eggs, one at a time, then add the vanilla extract, peppermint extract, and green food coloring (if using).
Step 5: Combine Dry and Wet Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
Step 6: Fold in the Chocolate
- Gently fold in the semisweet chocolate chips and mint chocolate chips until evenly distributed.
Step 7: Scoop and Bake
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
Step 8: Cool and Enjoy
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

- Don’t Skip the Peppermint Extract: This is the key to that signature minty flavor!
