  • 2 large eggs: To bind the filling.

Instructions

Step 1: Prepare the Crusts

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie dough on a lightly floured surface. Use a round cutter to cut circles slightly larger than the muffin tin cavities.
  3. Gently press each circle into the muffin tin, making sure to line the edges evenly.

Step 2: Make the Filling
4. In a mixing bowl, whisk together the eggs, corn syrup, brown sugar, melted butter, vanilla extract, and salt until smooth.
5. Stir in the chopped pecans.

Step 3: Assemble the Pies
6. Spoon about 2 tablespoons of the filling into each prepared crust, filling them almost to the top.
7. Add a few extra pecan pieces on top for decoration, if desired.

Step 4: Bake
8. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crusts are golden brown.
9. Remove from the oven and let the pies cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
