For the Shortbread Layer

For the Caramel Layer

  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract

For the Chocolate Layer

  • 1 1/2 cups semisweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

Step 1: Prepare the Shortbread Base

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the flour and salt, mixing until a crumbly dough forms.
  4. Press the dough evenly into the prepared pan. Prick the surface with a fork to prevent bubbling.
  5. Bake for 20-25 minutes, or until lightly golden. Let cool completely.

Step 2: Make the Caramel Layer

  1. In a saucepan over medium heat, combine sweetened condensed milk, brown sugar, butter, and corn syrup.
  2. Stir constantly until the mixture thickens and turns a golden caramel color, about 8-10 minutes.
  3. Remove from heat and stir in vanilla extract.
  4. Pour the caramel evenly over the cooled shortbread base. Let set at room temperature or chill in the fridge for 1 hour.

Step 3: Add the Chocolate Layer

  1. Melt the chocolate chips with vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Pour the melted chocolate over the caramel layer, spreading it evenly with a spatula.
  3. Allow the chocolate to set at room temperature or in the fridge until firm.

Step 4: Cut into Bites

  1. Using a sharp knife, cut the layered shortbread into bite-sized squares or rectangles. Wipe the knife clean between cuts for neat edges.
