Ingredients
For the Lobster Scampi:

2 large lobster tails (about 10 oz each), shells removed and meat chopped

12 oz linguine

3 tbsp olive oil

4 tbsp unsalted butter, divided

4 cloves garlic, minced
-
½ cup dry white grape juice (or chicken broth)

Zest of 1 lemon

3 tbsp fresh lemon juice (about 1 large lemon)

½ cup heavy cream
-
¼ cup fresh parsley, chopped

¼ tsp red pepper flakes (optional for heat)

Salt and black pepper, to taste
For Garnish:

Fresh lemon slices

Extra chopped parsley

Grated Parmesan cheese (optional)
Instructions
Step 1: Cook the Linguine

Bring a large pot of salted water to a boil.

Add linguine and cook until al dente, about 8-10 minutes.

Reserve ½ cup of pasta water, then drain and set aside.
Step 2: Prepare the Lobster

While the pasta is cooking, heat 2 tbsp olive oil and 2 tbsp butter in a large skillet over medium heat.

Add the lobster meat and cook for 2-3 minutes per side, or until opaque and just cooked through.

Remove the lobster meat from the skillet and set aside.
Step 3: Make the Scampi Sauce

In the same skillet, add remaining 2 tbsp butter.

Add minced garlic and sauté for 1-2 minutes until fragrant.

Pour in white grape juice (or chicken broth) and lemon juice.

Increase heat to medium-high and bring to a simmer, allowing the sauce to reduce slightly, about 3-4 minutes.

Stir in heavy cream, lemon zest, red pepper flakes, and season with salt and pepper.

Let the sauce simmer for 2-3 minutes, or until slightly thickened.
Step 4: Combine and Serve

Add the cooked linguine to the skillet and toss to coat in the sauce.

Return the lobster meat to the skillet, along with any accumulated juices.

Toss gently to combine and heat through for 1-2 minutes.

If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Step 5: Garnish and Serve

Plate the lobster scampi and linguine, twirling the pasta into neat nests.

Garnish with fresh parsley, lemon slices, and a sprinkle of Parmesan cheese if desired.
