For the Sugar Cookies:

  • 2½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 2 tsp vanilla extract

  • 2 tbsp milk (for soft texture)

For the Strawberry Glaze:

  • ½ cup fresh strawberries, finely chopped

  • 1½ cups powdered sugar (sifted)

  • 1 tbsp lemon juice (balances the sweetness)

  • 1–2 tbsp milk (adjust for consistency)

Optional Garnish:

  • Freeze-dried strawberries, crushed

  • White chocolate drizzle

  • Sprinkles or edible glitter


Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C).

  2. Line baking sheets with parchment paper and set aside.

Step 2: Make the Cookie Dough

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  2. In a large bowl, cream butter and sugar together with a hand or stand mixer until light and fluffy (about 2-3 minutes).

  3. Beat in the egg and vanilla extract until combined.

  4. Add dry ingredients in batches, mixing on low speed.

  5. Add milk and mix just until dough comes together. Don’t overmix.

Step 3: Shape & Bake the Cookies

  1. Scoop about 1½ tablespoons of dough and roll into balls.

  2. Place on prepared baking sheets, leaving space between cookies.

  3. Flatten gently with the bottom of a glass or your hand.

  4. Bake for 10-12 minutes or until edges are lightly golden.

  5. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Step 4: Make the Strawberry Glaze

  1. In a small bowl, mash chopped strawberries with a fork until juicy.

  2. Add lemon juice and sifted powdered sugar.

  3. Stir in 1 tablespoon of milk, then add more a teaspoon at a time until you reach a thick, pourable glaze consistency.

  4. Optional: Strain the glaze through a sieve for a smooth finish, or leave the bits of strawberry for a rustic look.

Step 5: Glaze the Cookies

  1. Once cookies are fully cooled, spoon glaze onto the center of each cookie and spread gently.

  2. Let the glaze set at room temperature for 15-20 minutes.

  3. Garnish with crushed freeze-dried strawberries, sprinkles, or a drizzle of melted white chocolate if desired.

Notes

Use Room Temperature Butter – This ensures a smooth dough and perfect texture.
Don’t Overbake – Take them out when the edges are just turning golden; they’ll continue to cook on the pan.
Cool Completely Before Glazing – Warm cookies can cause the glaze to melt and run.
Strain the Glaze – For a smoother look, but keep the strawberry pieces if you like a chunky, real fruit finish.
