Ingredients
For the Cookies:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Strawberry Glaze:
- 1/2 cup fresh strawberries, finely chopped
- 1 cup powdered sugar
- 1–2 teaspoons milk (as needed for consistency)
- 1/2 teaspoon vanilla extract
Instructions
Step 1: Make the Cookie Dough
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar using an electric mixer until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Step 2: Shape and Bake the Cookies
- Scoop tablespoons of dough, roll them into balls, and place them on the prepared baking sheets about 2 inches apart. Alternatively, roll out the dough on a lightly floured surface and cut into shapes.
- Bake for 10-12 minutes or until the edges are just starting to turn golden. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Step 3: Make the Strawberry Glaze
- In a blender or food processor, puree the chopped strawberries until smooth.
- In a small bowl, combine the strawberry puree, powdered sugar, vanilla extract, and 1 teaspoon of milk. Mix until smooth and pourable, adding more milk as needed to reach your desired consistency.
Step 4: Glaze the Cookies
- Once the cookies are completely cool, dip the tops into the strawberry glaze or use a spoon to drizzle it over them. Allow the glaze to set for 15-20 minutes before serving.
Notes
- Chill the Dough: For extra soft cookies, chill the dough for 30 minutes before baking.
- Use Fresh Strawberries: Fresh berries give the glaze a vibrant color and flavor. Frozen strawberries can be used but may require extra thickening.
- Control the Glaze Thickness: Add powdered sugar or milk as needed to adjust the consistency.
