Description

This Low-Carb Sautéed Zucchini is a simple, healthy, and delicious side dish that’s perfect for any meal. With tender zucchini slices cooked in olive oil and seasoned with garlic and herbs, it’s a flavorful addition to your table that’s ready in just 15 minutes!

Ingredients

Scale
  • 3 medium zucchinis, sliced into thin rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 teaspoon Italian seasoning (or your favorite herb mix)
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prep the Ingredients

  1. Wash and dry the zucchinis. Slice them into thin, even rounds (about ¼-inch thick) for consistent cooking.

Step 2: Heat the Skillet

  1. Heat the olive oil in a large skillet over medium heat.

Step 3: Cook the Zucchini

  1. Add the zucchini slices to the skillet in a single layer. Avoid overcrowding to allow proper browning.
  2. Sauté for 2-3 minutes without stirring, letting the zucchini develop a light golden crust.
  3. Stir and continue cooking for an additional 3-4 minutes until the zucchini is tender but not mushy.

Step 4: Add the Garlic and Seasonings

  1. Add the minced garlic, salt, pepper, and Italian seasoning to the skillet. Stir well and cook for 1-2 minutes, just until the garlic is fragrant.

Step 5: Serve and Enjoy

  1. Remove the skillet from heat. Sprinkle the zucchini with Parmesan cheese and fresh parsley, if desired. Serve immediately.

Notes

  • Don’t Overcook: Zucchini cooks quickly. Overcooking can make it mushy.
  • Season at the End: Adding garlic and seasonings toward the end prevents burning and preserves their flavors.
  • Use a Hot Pan: A hot skillet ensures the zucchini gets a nice golden sear.
